INGREDIENTS

3 medium ripe bananas, mashed (about 300g)

2 large eggs

225g nonfat Greek yogurt (about 1 cup)

2 scoops vanilla protein powder (about 60g)

2 cups rolled oats (180g)

2 tsp baking powder

1 tsp cinnamon

1 tsp vanilla extract

1/2 tsp salt

Optional mix-ins:

1/3 cup dark chocolate chips

1/4 cup chopped walnuts or pecans

INSTRUCTIONS

  1. Preheat oven to 350°F.

  2. Blend the oats in a blender or food processor until they resemble flour.

  3. In a large bowl, mash bananas and whisk in eggs, Greek yogurt, and vanilla.

  4. Stir in oat flour, protein powder, baking powder, cinnamon, and salt.

  5. Fold in chocolate chips or nuts if using.

  6. Pour batter into loaf pan and bake for 45–55 minutes, or until a toothpick comes out clean.

  7. Let cool for at least 15–20 minutes before slicing.
